Kitchen Prep Cook in a Beautiful National Park Cafe

The Kitchen Prep Cook is responsible for assisting the Kitchen Manager in the development, preparation, control and delivery of all food produced for retail sale in Parks Conservancy visitor center cafes. The Prep Cook reports to the Kitchen Manager and works a varied schedule that includes weekend days and holidays. This is a seasonal position through October, 2016.

Essential Functions and Responsibilities:
-Prepare and package sandwiches, salads, soups and assorted sides for sale
-Operate basic commercial kitchen equipment including range, slicers, convection ovens and Robocoupe
-Wash and sanitize kitchen prep dishes, equipment and catering dishes
-Deliver product to cafes in a timely manner and fuel/maintain delivery vehicle
-Maintain kitchen in inspection condition at all times including completing food safety logs and dating, rotating and inspecting all food for freshness
-Maintain positive, productive relations with coworkers and vendors
-Maintain ongoing communication with café managers regarding ordering needs
-Café fill-in assignments, as required by the business
-Other duties as assigned by Kitchen Manager
-Provide vacation relief at cafes as needed

Knowledge, Skills, and Abilities:
-Familiarity with basic cooking methods and ability to apply them
-Prior experience with fast pack/grab-and-go packaging process
-Ability to multi-task quickly and consistently
-Demonstrated willingness and ability to learn
-Outstanding attendance
-Industry standard uniform and grooming for food service
-Must be able to work well with minimal direction and maintain standard production

Education and Experience:
-High school diploma
-1+ year cooking experience in commercial kitchen environment
-Familiarity with Health and Safety Codes
-Certifications or Licenses:
-Current California Driver’s License with clean driving record
-Current ServSafe food handler certification

Physical Requirements and Work Environments:
-Work is performed in a kitchen setting
-Work is performed with knives, cleavers, slicers, shredders, etc.
-Work is primarily performed standing or walking
-Work requires squatting and kneeling
-Frequently lifts, carries and positions objects weighing up to 40 pounds
-Work requires driving in congested traffic settings for up to 40 minutes per trip
